The Story of the Steep Mountain Fields
Nakai Farm is a small, dedicated family business operated by Nakai-san and his father in Wazuka, Kyoto—a region legendary for its dramatic, steep tea landscapes. Together, they manage 23 distinct tea fields, navigating narrow, thrilling mountain paths by truck to tend to their crops.
Several years ago, Nakai-san made the brave choice to transition to entirely chemical-free farming to preserve the natural beauty of Wazuka. While this eco-conscious shift cut their annual yield in half (from 6,000kg to 3,000kg), their commitment to quality over quantity earned them high praise, including from a prestigious luxury hotel in Kyoto. Tokubetsu is incredibly proud to be the exclusive international partner bringing Nakai-san’s exceptional harvest outside of Japan.
The Purest Spring Harvest
This Premium Sencha (上煎茶) is made exclusively from Shincha—the highly anticipated, first harvest of the spring. Crafted from the coveted Yabukita cultivar, Nakai-san carefully plucks only the smallest, youngest, nutrient-dense tea buds.
Because these leaves grow under the bright Kyoto sun without any shading nets, they develop a flawless balance of natural sweetness, rich savory umami, and a crisp, refreshing clarity. It represents the absolute pinnacle of what a clean, natural Japanese green tea can be.
The Benefits in Your Cup
-
Unrivaled Freshness: Packed with the vibrant energy of the season’s very first growth, offering a remarkably smooth, clean taste free of any harsh bitterness.
-
100% Edible Leaves: Because Nakai-san uses absolutely zero chemical fertilizers, pesticides, or herbicides, the spent tea leaves are fully edible and packed with leftover fiber and vitamins! (See our pro tip below).
Brewing Guide
To experience the delicate, bright profile of this premium tea, we highly recommend using filtered water. Japanese tea is traditionally crafted for soft water; using a filter ensures the intense sweet and umami notes shine through exactly as Nakai-san intended.
The Classic Warm Brew
-
Tea: 4g (approx. 1.5 spoons)
-
Water: 160ml at 70°C
-
1st Steep: 1 minute
-
2nd Steep: 10 seconds
Pro Tip: Cooling your water down to 70°C is the golden rule for this premium grade. It restrains the bitterness and completely unlocks the tea’s natural, velvety sweetness.
Zero-Waste Food Tip: Don’t throw away the leaves! After your third steep, empty the soft green leaves onto a small plate, toss with a little bonito flakes (katsuobushi) or sesame seeds, and drizzle with a splash of soy sauce or ponzu for a delicious, healthy side dish.
