The Story of the Steep Mountain Fields

Nakai Farm is a small, dedicated family business operated by Nakai-san and his father in Wazuka, Kyoto—a region legendary for its dramatic, steep tea landscapes. Together, they manage 23 distinct tea fields, navigating narrow, thrilling mountain paths by truck to tend to their crops.

Several years ago, Nakai-san made the brave choice to transition to entirely chemical-free farming to preserve the natural beauty of Wazuka. While this eco-conscious shift cut their annual yield in half (from 6,000kg to 3,000kg), their commitment to quality over quantity earned them high praise, including from a prestigious luxury hotel in Kyoto. Tokubetsu is incredibly proud to be the exclusive international partner bringing Nakai-san’s exceptional harvest outside of Japan.

The Magic of Genmaicha with Matcha

Genmaicha (玄米茶) is a beautiful Japanese tradition that blends green tea leaves with deeply toasted brown rice. It is said to have originated in Kyoto in the 1920s, when leftover mochi and crispy rice grains were added to tea leaves to ensure nothing went to waste. What started as a humble practice of mindfulness and appreciation quickly became a beloved global flavor profile.

This special blend takes it a step further by coating the tea and roasted rice in vibrant green matcha powder. The result is a stunning combination: the nutty, savory warmth of the rice paired perfectly with the bright, rich umami of authentic Kyoto matcha.

  • Water: 160ml at 90°C

  • Steep Time: 30 seconds

Pro Tip: Using hot water at 90°C is the sweet spot—it perfectly activates the comforting, nutty aroma of the roasted rice while keeping the delicate matcha and green tea smooth and vibrant.

The Refreshing Cold Brew

  • Tea: 10g

  • Water: 1L

  • Steep Time: 3 hours in the fridge, or overnight for a deeper umami sweetness.
